Lavender Cookies

 

 

 

Ingredients:

 

250 g Flour

200 g Butter

120 g Iced Sugar

50 g ground Almonds

1 Egg Yolk

1 Packet of Vanilla Sugar

2 tbsp. Lavender Flowers

Zest of 1 Lemon

1 tbsp. Lemon Juice

1 Pinch of Salt

Decoration: melted white Chocolate

 

 

 

 

 

Method:

 

Mix the butter (at room temperature) with both types of sugar. Add the sifted flour, the ground almonds, the egg yolk, the crushed lavender flowers, one pinch of salt, the lemon zest and the lemon juice.

After you work the dough well, form a ball and let it cool for two hours. Then roll out the dough (thickness 5 mm) and cut out the shapes by using round cookie-cutters.

Bake for about 10-15 minutes at 170 °C.

Once your cookies are baked, you can decorate them with white chocolate melted in the water bath, or leave them as they are.
